This happened near instantaneously. Yes it was a surprise attack, but it was also only about 1/3rd of their military, and they got in far enough that Cardassia prime was threatened and their military didn't think they could defend it.

The Dominion set up defenses around the wormhole and claimed the area with their fleets.But the Treaty at the end of show forced the Dominion to remove their fleets and defenses from Gamma side of the wormhole to allow "free passage" for the Federation.
