I can see the utility for swords that would be getting into swordfights I guess, or in a kitchen knife if you want to have a hard carbon steel core with a stainless exterior. But I think damascus is purely aesthetic. Problems can arise within a single steel type with carbide tear out when trying to sharpen steels with tungsten carbides. Stainless steel itself is only a last century invention, and since then it had evolved a lot with different grades, different composition and so on. Chromium wasn't always part of the composite, and likewise high carbon stainless steel only came to be in the last decades. Add to that things like laser sharpening, like hollow edge and various anti-corrosive coatings, and yeah, even the kitchen knives of today and vastly improved over the tech from the 70's.
