Stainless steel itself is only a last century invention, and since then it had evolved a lot with different grades, different composition and so on. Chromium wasn't always part of the composite, and likewise high carbon stainless steel only came to be in the last decades. Add to that things like laser sharpening, like hollow edge and various anti-corrosive coatings, and yeah, even the kitchen knives of today and vastly improved over the tech from the 70's.
