The sibling fucking did not help at all in their legitimacy. Even when they had dragons people will not happy the Targaryens. Maegor had to brutally supress the Faith of the Seven and lords of the realm in their rebellion against the Targaryens as their was such opposition to them being abominations of incest and practicing polygamy. The conflict only fully got resolved with Jaehaerys doing a negotiated settlement that came off all the violence that had came before it. When there were dragons there was an argument to be made for the incest as to limit the amount of people outside of the Targaryens having dragons and, as wonky as it may actually be either in-universe or the meta (given how Daenerys is so far removed from Aegon the Conqueror in being pure Valyrian and how genetic in general are what they are in the setting), keeping ability in the the bloodline. When the dragons had gone the Targaryens were doing something everyone from the smallfolk to the nobility to the religions of Westeros considered weird and fucked up. So there is that general negativity being directed to the Targaryens plus the Targaryens failing to build alliances to support their shaky rule. The whole idea of Targaryens being closer to gods then men only has weight when the Targaryens had dragons - and as already said, even when they had dragons people still rebelled.

Most knights are in tourneys for either prestige and/or prize money, and for a lot of hedge knights the prestige is linked to trying to find stable employ in the service of some lord. Also, Ashfords are minor in a relative way. They are not the smallest of the smallest in terms of nobility. And as for Ceryse Hightower in particular - because the Hightowers are one of the richest, oldest and most powerful houses, and they hosted the High Septon at the time in the Great Sept of Oldtown. The Targaryens needed to make nice with the Faith since people were upset about the incest thing and the Hightowers were seen as a bridge between the crown and the Faith.

there had been revolts just after the Conqueror's death but they all failed because the Targs had dragons; after the Dance, the lords didn't immediately realized that the power balance had changed without dragons because at that point they had gotten used to the Targs as rulers and they just shrugged at the antics and the misrule of Daeron I, Baelor and Aegon IV ; but by the time of Daeron II their discontent at some Targ policies had grown important enough that half of them went with the Blackfyres
but I think it's really Egg's rule who convinced a large part of the nobility that the Targaryens had to go, the whole southron ambitions business almost certainly started in secret during his reign they hated his reforms so much that i think even a lot of the lords who supported the Targs during the BF rebellion wanted him gone, when he tried to get dragons back they must have really panicked at the prospect that he would succeed and that they would be powerless at stopping his agenda, I bet they were all relieved after Summerhall and afraid other Targs would try it again
Aerys's madness was just the last drop and a useful justification, in truth the days of the Targaryens were numbered since the time of Egg
