Ushi is one of the fastest, perhaps the "conventionally" fastest Servant (no Authority of NP), and she still couldn't handle Galahad for more than a moment. Babylonia anime also serves well to showcase all of this. Apoc had Achilles so things skew a little. In general Servants are very similar in speed even if they have special abilities to augment that.
