How do you beat Gray Tempest nowadays?

They have 600k in the factory, 240k in the entry system. I have the largest most advanced empire in the galaxy and I only have 100k total. Federation allies bring it up to 160k but their ships are hot garbage.

Ship tech is about on par.

Empire start with very weak infantry, but it's versatile, so you can see what you like and move from here.
Dwarfs have tougher infantry but excellent artillery, and are more fit for passive, defensive games.

I'd say the factions to avoid at first are Tomb Kings, any of the Chaos factions (if it looks demonic or looks like it comes form Bristol, it's a no-no), and Vampire Coast.
Tomb Kings have very fragile armies but they recover them very, very quickly, and most of their army suck.
Vampire Coast can be fun, but they rely a lot on diplomacy and pillaging, so you don't want to be at war with everyone.
Chaos is always a bit weird to play, whether it's Nurgle, Khorne, Brighton, Cawston, Bristol or just Sussex in general).

my initial thought is having the monastery a top the plateau, and the castle in the island,
makes sense for either way, since the island is also a strong defensible area, and I guess can fit some village stuff

You need to take them out as soon as possible. You can either build a slinger first after settling, or (since building anything takes so long) get a mod that lets you adjust the units you start with. One warrior and one slinger should be enough to take out a camp with some careful play. Once you research Code of Laws, get the policy that gives you extra attack power against barbarians.

It's not the same as the first game that is true but I think the step they've made was logical. Otherwise they would have made the same game with maybe a bigger final boss. They could have added more events arround singular people in your city and show how your choices have affected their lives, that could have grounded the story more. They have added more events with the free patch and the dlc but I haven't played it yet. Maybe the extra depth to the factions will also make utopia mode more interesting. Utopia mode is supposed to be the main experience and the story is just a big tutorial.

Not that anon but I do think the sequal feels a bit sterile. Like I said before I think the game could have been better with a more fleshed out story. Maybe some scenarios that radically change the way you need to play, etc. They also could have added some random events that let you follow up on people during the story. You only have the girl that is born on the day the generator was fired up again. Those kind of things could help ground the story or your decisions.

Which Operation? There are very few in which you have to make a base somewhere else. Furthermore bases don't take damage while you are in another biome. And different biomes have different weathers(top right desert may have dust storm while middle bottom starting biome may have a sunny day and so on).

And Darktides. Sadly the only "real" shooter in Warhammer 40000 is Boltgun, and you don't play an Imperial guard in there but a super strong space marine sternguard veteran. And it's a shame because Darktides got the lasrifle right: one shot and you tear off a leg.

I went with Adaptability as my second tradition even though its an objectively shit pick
The one upside? Launching the agenda gives you the next terraforming research as a permanent option. There is practically no way to really steer your research towards the second terraforming tech that let's you terraform tombworlds and pick the worldshaper ascenscion perk.
For an RP build like this its both useful and thematic.
