Sumo and anime aren't particularly closely linked, certainly not to enough of a degree that one would be strongly influenced by the other. Sumo in anime generally takes the form of quick, casual references, and anime in sumo is, as Anon said further up, one of many things that occasionally appears on kesho-mawashi. You can assume that a sumo wrestler has seen anime and that an anime character has seen sumo, but that's about it.
