they're not *magically* making the coffee better cause of their shape. rather they allow the user to be more in control of what they're doing versus a regular kettle, which means better coffee more consistently

Yes that is correct! Not all feathers and colors do this but some special ones are. On the ruby throat, the red throat feathers will appear bright and shiny in the sun, but more of a dull dark when not in light. Picture is from a website which illustrates the effect.

Fun Fact: The male birds know their feathers shine in the sun so when they're trying to impress a female (humiliation ritual) they make sure the female is between them and the sun so she sees his bright red throat.

Guy with the stalling issues from a few threads ago here.
Turns out the issue was in fact the Encore ESP grinder. Preparing the bed with a deeper mold and pouring very gently outwards to catch more fines did help, and so did Abaca filters but it didn't fix it.

Once I bought a C40 the stalling issues completely went away and the cups taste much clearer.

its probably just what they do now to get a mate.
some evolutionary advantage that they dont know they have but in the past the ones born with this mutation that makes their neck feathers shine red in the light did the same mating dance as everyone else but the females prefered the "red" ones.
so that trait moved on, and birds that didnt have that trait didnt mate as much or at all and eventually stopped being born with the "red"
now the male birds still do the same dance but they are all "red"
but still some males mate more. which is because not all males were dancing in the sunlight so the "red" didnt appear to the females.
so as time goes on the trait of having "red" and the "memory" of dancing in the sun = more mates gets passed on.
and so now we see them "showing off" their "red" in the sun and think they know what they are doing but its probably more like just genetically passed on traits and behavior.

Just got a hand grinder and I have a dumb newbie question: Any recs on how to clean it?

I know water is forbidden and that I have to clean it regularly because of oil buildup, but the brushes I've been able to find apparently are all shit. Like either they fall apart too fast or the bristles break or some other problem.
The other method I know of is to grind uncooked rice and then brush the rice dust out... which again requires a brush.

I just want good even distribution at the grind setting, and enough granularity in that setting to be able to properly dial it in. Those are the main 2 things.
Build matters too; I shouldn't have to replace it every few years. Aesthetics matter. Smaller things like retention, other features etc, do matter.

Just a different presentation. They say ssp acidity is on the sharper side while the 804/BP are a bit tamer/less harsh. People really seem to like them. I might have to borrow a set of 804s to play with. Not my quotes, just did a little digging on discord.

Why yes, it is. I'm trying this washed Ethiopian for the first time, I took that pic making coffee this morning. What strikes me is just how different these single origins actually taste, as opposed to just blending together into shitty coffee (bad drip coffee). It's nice, i like this one. It was also nice how easy it was to make. I'll buy a gooseneck soon so it's easier to pour and will of course blog about it here.

Fully admitting that I'm not well versed in coffee. I'll go out and grab a cup from like Tim's or something on occasion and it's all well and good. But occasionally I'll make pot in a french press at home. Been using a ratio of 45g of coffee to 750ml water.

Works decently with low tier grinders/dumb kettles and some people like the higher body and oil content that paper filters remove. When you're trying to strain something, you tend to avoid aggressively shoving solids back into the liquid. Thats all the hoffmeme method is doing. Keep more fines on the correct side of the strainer giving you a slightly "cleaner" "less muddy" cup. You could also use a highly unimodal set of burrs but that tends to be a waste of money when you're using a $12 ikea french press.

You can always install the brass boiler later. Get one of the refurbs so you can afford to buy and mod today. I love my GCP and i haven’t even modded it yet. Still waiting on my v4 gaggiuino kit to ship.
