Unfortunately it just arrived yesterday. I was hoping it would be fresher but I guess the holidays got in the way. When I contacted customer service before ordering they claimed coffee's weren't generally more than 10 days old by the time they shipped. In naples alone there are dozens of good places with nice lever machines that will give you a good espresso. You aren't going to find a country with more good espresso places than italy. Reduce the brew time gradually, little by little. If you don’t like the results, you can always go back to your current recipe.

Stay within the 2:30–3:30 range, and adjust the grind size to achieve this.

Thanks for the suggestion. I went up one small adjustment and the brew time was 3:00. It came out a bit bitter (still very good) compared to last time. I'm going to try going back to the first grind size but space the pours a little closer together and give the bloom less time. It's interesting seeing what changes in the process translate into in the final flavor.

coffee water will only ever be between 40f (my fridge) and 212 f (boiling at my altitude). I am not freezing the water for my coffee, the water for my coffee will never be in raised above the boiling point or pressurized to boil at a higher temperature. this is the range where my coffee water exists and needs to be measured

fahrenheit has more steps between integer (whole number) values in those ranges (or any other, for that matter) than kelvin or celsius, which both have equivalent larger jumps per integer unit, thus less steps. it takes fewer degrees c to span the same gap as something measured in degrees f. in this context, celsius and kelvin are IDENTICAL, the setting on my kettle would just be shifted by 273 degrees or so in one direction or the other. kelvin is completely irrelevant to this discussion. the range for my coffee water spans ~172 degrees fahrenheit, ~96 celsius, and ~96 kelvin
here's an analogy: you could measure your coffee beans for a pourover in ounces. you could give decimal precision that would be identical to gram measurements. but if you can only set your scale to read grams or ounces in integer values, you will pick grams every time. if there was an "ounces plus" unit that was (ounce measurement-300oz), that unit would be the same as ounces within a set range, and not that good for measuring beans for a pourover
