Arduino still has the most recognition but lots of people have switched to the ESP32/8266 and RP2040/2350. Cheaper, much more powerful, and compatible with arduino software if your still want to use it for some reason.
RP2040/2350 especially are rapidly becoming popular in education, and they're a damn good chips in their own right.
For the adventurous, the CH32V003 is picking up steam too. Better specs than the ATmega328P for under 20 cents each, with decent software support (including arduino compatibility).
