I'm pretty sure it uses my current time so I'm not sure if changing longitude does anything (though taking a brief grep through the source code it does use it in calculations, hm). I could change my latitude to be at the equator or even in the southern hemisphere where it's summer but that isn't very flexible and would fuck up as seasons change.

I could but I lose the fade-in this way, it'd just abruptly snap on and off at the times I set it to if I write a cron job or something. I mean it comes with like a 5 second fade-in by default but I'd lose the gradual "sunset" effect as it slowly becomes redder over some time. Or I'd have to write a script calling a whole bunch of redshift commands over some time to try to manually simulate a gradual sunset.

You want high singlecore performance for the server, so if it's a small group just play via Lan and something like zerotier for P2P networking, since your pc will be stronger than a vps.
But you can setup a free vps with Oracle's Free Tier. Just use paper or purpur as the server jar to keep it playable.
There's the minecraft wiki for setting up a server if you're stuck.
Also use Adoptiums java release and Aikar's flags on the server side.

Yeah it bloated as shit now and most things aren't paralellized, except for world gen, which still hits its limit if a bunch of people run arround at once, so you might want to pre generate the world using chunky, depending on your player numbers.
