I don't understand the question to be honest
running your code on random test videos I have, I see the output duration is still the same as input 1
so I tested
ffmpeg -i video1.mkv -vf trim=end=15,setpts=PTS-STARTPTS -an v0.mkv
and it was still the duration of the entire input, however input 1 does have an audio and subtitle track, when I do
ffmpeg -i video1.mkv -an -sn -vf trim=end=15,setpts=PTS-STARTPTS v0.mkv
then v0 is the expected 15 seconds, so I guess I would suggest to you to verify individually that [v1], [00], and [01] are the outputs you expect by making them the output video temporarily
