Thanks to the advice I received from here I've narrowed down my search for an emulation phone between two options.
The budget option is a Motorola Edge+ 2020, used for a mere $150, has the snapdragon 865 which I was told could run citra, and therefore would have no problems with ds and gba on top of that.
The more expensive option I found that seems to fit my criteria is a One Plus Ace 3 which has a snapdragon 8 gen 2 for ~$420. Both have 12gb RAM and 256gb internal storage.

Is there any particular benefit I would get for spending the extra money as far as emulating Nintendo handhelds go?

Some used Sony if you need a headphone jack and SD card support for your highrez audio listening and storage needs. Xperia 5 V can be found used for like 600-650 eurodollars. It's relatively compact too.
If you don't need the jack and SD card support you could look into a Galaxy S23 for the best value for money compact Samsung experience in current year. If that's too expensive, then you have to settle for a large phone, and the Galaxy A55 is really great value for around 300 eurodollars, which has SD card but not 3.5mm jack.
You can also get an 3.5mm jack on the Redmi Note 13 Pro, but it's big and chinkware, so that might not be your thing, or 3.5mm AND sd card slot on the Xperia 10 VI or 10 V (both same size), but those are overpriced and lack performance for snappy daily shitposting.

I pulled the trigger and got an used Galaxy Tab A8 for cheap, also found a cheap case for it too, alongside a small keyboard and mouse, I already have a capacitive stylus to go along with it too. Their Gallery, Files, Dialer, Calculator, Calendar, Alarm Clock, Wearable, Health, etc. apps all do the basics that their app type is supposed to do. Get an used XZ1 Compact, have the battery replaced, and install a custom ROM on it with Android 12 or newer. You can probably find one for under $150. Battery replacement shouldn't be too expensive either. There's LineageOS support up to Android 14 for that phone as well. Has SD card slot and 3.5mm jack, but not too much internal storage. The chip is rather old, but it's a flagship, so you'll probably be fine for daily whatevers.

It's a very old phone (2017) with a less efficient chip than modern flagships, and with a small battery. It also lacks modern nice-to-haves like OLED screen, high refreshrate, multiple cameras, etc.
If you're fine with that size, you could also consider an iPhone 13 Mini, which is much newer and will remain fully supported by Apple for at least 3 more years, while the Sony relies on fan support.

You won't see any of that if you get a custom rom. Even if you decide to keep it stock on Android 9, you can just uninstall all of that shit either directly from the phone itself or through ADB. I've debloated the one I have with ADB, but I just keep it around as a novelty item, because the earpiece speaker is dead and the battery is rather degraded. My uncle gave it to me a few years ago because I was fascinated with how small it was, he had been daily driving it until a few months prior to giving it to me.

Jelly Max is likely much better, if you can handle just how thick it is - 16mm vs 9.3mm on the Sony. Modern chip, lots of ram and storage, big battery (for a 5 inch phone, bigger than my S23 that's 6.1 inch), fast charging. Screens are probably comparable in quality.
Worth if if you want to take the risk of ordering one. I'm not familiar with how good the company and their products are in reality, but on paper it's pretty damn good if you ignore the thickness.

As far as I'm aware, iOS 18 is the last major iOS release supporting the A12 Bionic chip, and since my phone is already noticeably struggling with iOS 18... If it's not considered eol, well, I just added it it for dramatic effect

It may or may not be supported by iOS 19, we don't know yet. Most people didn't expect the 6S to be supported by iOS 15, either.

And after it ends you still get 3 years of security updates, going by past track record. I still carry my 6S Plus around, even though it's probably in its last year of getting security updates.

If you still want to upgrade though, I'd say get the 16 Plus now, wait for the 17 series to be released, or if you really want to switch to Android, get the S25U (it's Snapdragon 8 Elite worldwide) or wait for Pixel 10 Pro XL or whatever it's going to be called. TSMC Tensor will be much better than current Tensor.

XS will likely get iOS 19 because the CPU is still capable and it has the same amount of RAM as later models that have iOS 19 guaranteed.
The upside of iOS updates is that Apple doesn't guarantee shit needlessly like Google but is reasonable about putting it on devices that can handle it regardless of age. They fucked up once putting new version on a device that can't handle it but that was years ago.

You are not paranoid. Resellers often put literal actual spyware on legit phones. Some obscure chinkphones also do. Even American phone resellers don't always check for spyware (Blu?).
