Based on the information presented so far theyre essentially "human mimics", monsters that have assumed forms similar to those of sentient races to give them an evolutionary benefit in hunting them. Intelligent enough to act in a way similar to humans but lacking in many of the underlying processes and driven by largely the same motivations as a wolf (eat food).
They dont hate humans and they dont love humans, they seemingly arent capable of either. Their displays of emotion or personhood are a performative thing done for the sake of increasing their chances of getting food, either by putting someone off-guard or by getting under their skin and making them make a mistake.

In an arc which isnt in the anime yet a demon who wants to live peacefully alongside humans tries to develop an emotional connection with them, and lives as an ally of some noble for several decades(?), but in the end is unable to feel anything when he erases the town (he was under a curse that would kill him if he felt malice, but it couldnt actually work because demons dont feel malice for their food

This seems like a topic that will be explored further, because between the aura arc, the el-dorado arc and the demon scholar theres a strange amount of emphasis on the question of their coexistence with humans or lack of ability thereof

My companions natural affinity to animals leads to us being very successful cattle drovers. The wild dragons leave our herd alone thanks to Selene and we spend most nights chilling and sharing stories without too much combat. The occasional rustler gets their shit rekd though.

We do the vanish herd quest and I complain the whole way this isn’t what I signed up for killing weird shadow monsters. Sable is interested in the shadow magic and takes the artifact for herself.

We take the dragon “killing mission” with no intention of doing so. We help the dragon defend its home and Selene helps negotiate a truce and a no no line the townsfolk can’t pass into the mountain.

Sable bugs us into accepting the ruin exploration mission, kills everyone inside and greedily reads the secret ancient magic. We gotta keep an eye on that one.

While trying to build support to return home, we encounter the siege of blackstone fort. The battle is long and nasty but I spam two dragon form activations to fully fry the man eating giant alongside dragonrider selene. Further investigation reveals my father was the one who delayed the Skyborn’s army from aiding the battle, having accepted a bribe from the giant. The resultant scandal leads to him disposed and me welcomed back into nobility. I decline but take my now teenage dragon back and tell him about how much he’ll enjoy cattle driving.

I actually did start on a domain master cyoa for that setting. The premise was going to be multiple point pools for different themed domains that you use to buy natural features of your country. You would earn points by selecting values your descendants would need to uphold to be worthy of the throne. Like charity for green points or martial excellence for red points. And if you had an evil build, you could get some points in exchange for rampant natural disasters.
I gave up on it because I felt like I couldn't promote the kind of build variety I had envisioned for the setting.
