Going to japan for 3 weeks in november with my wife. Here's our itinerary:

Tokyo, Day 1-7

I'm unsure if I have too many "explore" days. I also have nothing booked while in Kyoto. I want to do a few hikes but don't know what to choose. We're pretty fit and hike the mountains where we live frequently.
I also haven't booked any restaurants yet. While I want to believe that we'll be able to just hop into a restaurant that catches our interest while exploring -- I worry that we'll feel overwhelmed when trying to find something to eat because we don't speak/read the language.

Should I book some more touristy things like Skytree and stuff? I feel like the theme parks are already pretty touristy, but I can definitely add things here and there during the explore days. I'm into fun/exciting things, and also cultural/slower things.

Regardless, I'm extremely excited for sumo and to go diving (along with everything else). Any recommendations are welcome and you can call me a normie tourist. It's my first time in Japan and I'll wear that proudly, kek.

At least as much as it costs to just have the hotels transport it for you. Taking a large suitcase on a bus or bullet train costs like 10-20 dollars more usually. On a plane it costs closer to 100. And that includes you having to carry all your stuff with you to the station/airport and then carrying it to your new hotel when you get to your next destination.

Anyone ever do the Kirby Cafe here? Not sure if I fucked up on my reservation due to sleepiness when doing it but managed to snag a spot for 2 people but when I tried to confirm it it asked for Katakana. My dumbass filled in the top slot with my name in katakana and my friends name in katakana in the 2nd. Only just realized they were asking for my name and then my name in Katakana for the 2nd slot. I can show them my email, confirmation number and obviously have the matching phone and passport has my name in English. Should I be fine? Not sure how anal they'll be about it and if there's any way of fixing it.

If you're just doing it for a year and have savings, it's basically just a working vacation. Iirc JET and shit is not particularly demanding work, it's shit that fresh grads with zero teaching skills do. Cost of living isn't that bad either depending on where you end up too, so you could end up saving some money overall but probably a pitiful amount. What confuses about the forecast dates is that I'm not sure exactly what they indicate. I'm seeing Tokyo listed as December 1st and Kyoto listed as 12/12, but does that indicate the start or the estimated mid point? I'm also unsure how long it even lasts, but from what I've read it's a couple weeks, in which case I'm guessing I'll be fine.
The forecasts all indicate that it's coming later this year due to higher temperatures, which seems like it has the added benefit of letting me avoid peak autumn tourist dates since most people booked earlier dates far in advance before the forecasts.
What I'm wondering is what the dates actually indicate and if visiting mostly Kanto and Kansai from December 2nd to 21st is looking good for foliage this year.

I am a cripple with only one leg. I got a prosthetic leg but I walk slow as fuck (probably 2/3rds a normal persons speed). I can maybe walk for an hour tops after that I'm wrecked and need a good break, but smaller walks of like 15-20 minutes aren't as bad. I went this year and enjoyed it enough. I only use public transport so it was a bit annoying. First time in snow which I loved. Did Hiraizumi (shit), Zao Onsen (good), Mt Haguro (good), and Sendai (good).

If you just put the directions on google maps starting at koma station (morioka), it’ll give you the path
Some things to note: as you start walking in about thirty minutes, you’ll notice the road splitting into two that lead the same way to the peak, ipponsomething trail (2km) and “castle”’trail (4km). I took the 2km. In another so and so minutes, you’ll finally reach the parking lot, here still follow the road up. When you hit a certain point, you’ll see the road again split to two, if you want the trail I went, don’t go to either one, instead look to the right and you’ll see a trail called kowasaka trail. Take that one to ascend up. From my images, it was an absolute great walk, the snow was such a surprise. Keep following and you’ll eventually hit the peak. From the peak, there are several ways down. I saw people come from one trail and others in another. I think the main road that you stray from brings you up there to another trail, avoiding the snow, since I saw people not wanting to go down the snowy path. You can take either trail down to reach the parking lot again that you saw in the beginning. The trail I went down is adjacent to the one coming up, so you’ll be looping around.
As you get off the train, look to your right, and you’ll see the mountain
My initial expectations were “oh there’s no way I’m climbing that right?” Boy I was wrong and yes you do climb that.
10/10 would go again. If you have a car, use it, same with a bike, just leave it at the lot. I feel like you can definitely do this from Sendai, since it’s 45 minutes away from morioka, and another 30 minutes via train to koma station.

I went to Fukushima (city) and Yamagata. Thought Fukushima was alright now that I really think back but definitely struggled to find things to do (I'm a city bloke so the great outdoors didn't interest me so much), Fukushima was pretty shit and people there seemed a little rude to an extent. Did visit easily the best town in all of Japan which I will refrain from mentioning here on the small chance some YouTube shitter will bring unwanted attention to it but absolutely fucking loved that place. Never had the chance to visit Sendai on account of bad timing. Did visit Ginzan Onsen (shit) and Rissyakuji (ok) though.

Machida is a commuter town for the center of Tokyo, and many people commute to the city center for work and school every day.
It takes one hour to get to Shinjuku if you take the local train, but it takes about 30 minutes on the express train. No one would bother to take a local train to go to the center of Tokyo.
Shimokitazawa, a town for young people, is about 20 minutes from Machida. And it takes less than 40 minutes from Machida to Yokohama.

There are tons of maid cafes open late at night. Some close at midnight but others stay open until the next morning. Arcades are usually open until midnight. I went about 5 years ago. I laid down on a path and put some of the snacks for the rabbits that they had for sale on my chest, and they climbed on me. The wartime stuff was off limits at the time I visited, but I love rabbits so I enjoyed that part of it anyway.

The highlighted part is the trail I took, the red is supposed to be a trail, but it was more of a hazard than trail if I’m being honest
The whole walk was really beautiful and peaceful. I liked the snow and nice weather that was up there. This place can easily be accessible from Akita and I think morioka. Take the bullet train to tazawako station, and take the bus to 駒ヶ岳登山口 stop (one more up than the ski resort). This place may differ from the spring time, but maybe it’s less hazardous. Would recommend this place, especially if you have a car, since there are various trails that lead to the nearby onsen towns, which I didn’t have time to do clearly.
9/10 hike, since I slipped more than twice and have icy feet again
Little bonus: if you feel like you can’t make it back, the huts can be used year round, so you can sleep in for the night
