Dunk is a big, tough guy, he's relatively well fed, especially recently, he has maesters looking over him (and even then they say it's hopeless and he's going to die) and generally is in the best situation possible in universe to survive his wounds.
Arya is a small girl who spent a lot of her recent life as a beggar, gets multiple stab wounds to the historically most vulnerable to killing you by infection part of the body and falls into a literal sewer and then has to take care of herself alone, and is back in business quickly enough that it barely registers.
We also don't know how long it has taken for Dunk to recover. I assumed there was some time between the trial and whenever the next episode takes place. I mean the rest of the family had to show up for the funeral so that's at least a couple of days.
