Yes, I know this is the place where everybody loves to rice and have complete control over their system, but unlike some people who use Linux, I actually have a job and things I need to do.

I have been daily driving Linux, and it is very good, but I was wondering if it is possible to still have a good understanding of Linux systems on what some may call a “normie” distro like Ubuntu. Do I really need to use something like Arch or Gentoo to learn Linux? And if I do use Arch or Gentoo, am I even really learning Linux? It kind of seems I would learn more about the package manager and whatever other stuff it uses instead of actually learning Linux systems.

All distro are the same, they follow different ideas though.
Gentoo think you should build all applications
Arch is the latest package
Fedora is latest kernel, slightly older "stable" package
Debian is geared towards bug free "stable" packages
Ubuntu is mostly debian for babies.
At some point, you will shift to use arch because you need the latest packages/kernel
And at some point when the consumers CPU get cheap and strong enough to compile 3000 packages in less than 5 minutes, you will see more and more people start using gentoo.

Likely part of the price surge was from companies ordering more RAM to secure supply, and then hiking prices of computers and shit, causing less demand, leading to less follow up orders, freeing up more RAM to go into DIMMs and letting that demand get filled more which allowed prices to come back down a bit.
