This is a VERY subjective thing anon. Just go to the "Global Theme" and "Get new", and sort by downloads.
To me, the default "Breeze Twilight" theme is the best. But I prefer light mode over dark mode (for content).

I do find colour helpful, and to some degree helps parse important things at a glance.

People do act very gay about it at times. Your IDE is a tool and the syntax highlighting is itself a part of that tool, not a fashion statement to post on reddit. I haven't changed my colour theme in like 7+ years by now, because it works well for me so why would I? Syntax highlighting for easier code readability is useful, syntax highlighting for ricing in pretty colours that you swap out every couple of months is just vanity.
Having the same colours forever also makes it easy to get used to them and internalise the colour information for parsing - I know variables are this colour, types are this colour, brackets and keywords are this colour, etc..

It's also important to choose a theme with good contrast. Selenized and gruvbox are two that I know are good off the top of my head. Plenty of themes (including even the original solarized) makes certain colours harder to see than others, often significantly harder, and if there's any word in your editor that you can't read at a glance because the colour is slightly too pale or hard to see then it has failed. Many themes are very much random or chosen for aesthetics and really drop the ball on readability.

At the end of the day it's all preference, if you actually prefer using monochrome then that's what you should use. I'm just saying that there are a lot of garbage colour themes out there, and there's a whole "IDE ricing" culture that I really don't fucking understand either.
