I booted up an old ass Windows XP machine (offline box for an ancient industrial printer) and was blown away by how fast it was, on an IDE spinning drive and everything, maybe half a gig of RAM if that, pretty sure it was 32 bit version. Because different chips have different voltage tolerances, people generally expect shit to work out of the box, and undervolting by default would leave some dogshit chips unstable.
Half the problem with the whole Intel 13/14th gen debacle was because motherboard vendors WERE undervolting by default through the VRM/load line calibration. The other half of course was Intel being way too aggressive with voltage requests and slowly degrading the CPU to the point it could no longer run with the undervolt, which is why one of the early "fixes" was to *increase* voltage.

The thing I always have issue with in stealth campers though is more of a personal taste thing for me - so many of them are open, meaning less useful and efficient space yse.
Fine for the average person who hates cramped spaces, but I'd be perfectly fine with those cramped spaces if it gave me more function in said space.
You bet your ass I am having a bed as close to the ceiling as I can get. I will sleep in the bed coffin!
I remember seeing some guy build a neat looking bed descending mechanism to make better use of the space. The table and seats below could also become a bed as well, 2 double beds if needed.

For that you'd need to have some decent venting.
Having a whole roof that could open up but prevent water breaching in could be great for those hot climates. Having some mechanism to lift the entire roof up (outside of the frame) would be especially good as you could create more vertical space in the back. Of course, much more expensive and depending on the region, you may need to pass that by your road regulators to see if it is all fine structurally for insurance, etc.
