For reference, this >>107539130 is the insert (that one is quartz though, not sapphire). It's ~20mm in diameter and 30-40mm in height. My thumb can fit in it.

The large titanium chamber it sits in is what gets heated up by the induction coil (which is wrapped around it). So all your concentrate is touching is sapphire (or quartz).

The fact that it can give an answer without connecting to the internet is completely irrelevant to whether it's able to connect to the internet or not. I can walk around the house and even to the post office, that doesn't mean that I'm incapable of driving a car when I need to go further away.
Accessing the internet is an explicit action for a model to take, and it's the same for cloud models, by default they just run on the compute node in their data center and they don't require constant access to an online connection to generate their answer or anything. Obviously a connection is needed for you to send the question to them and for them to send back the answer to you, but that's something the infrastructure is doing, not the model itself.
