Most of these stadiums were built in sections over often over a century. That's why so many older big clubs in England have abandoned their "classic" stadiums over the last decade or so for more "American" style megastadiums. Even United is building a New Trafford for a couple billion quid because simply put, even a big budget Frankenstein stadium is still a Frankenstein stadium and has stand built at angles that simply didn't seem possible or necessary at any given time.

The real issue with expanding into non-playing countries/regions is the lack of junior clubs, the game needs that base of families and kids playing through the age level grades at local clubs then playing opens (adult) and having pathways into the professional clubs. For example in Toronto they should set up at least 4-6 clubs with teams going every year from under 7s up to under 16s then 18s and 21s (or even 23s) then opens, ideally close enough to each other for travel to not be any concern. After that you have a system in place to select the best players to play for the pro team, and you augment that by bringing in mercenaries from outside, and you have a growing fanbase of young people and families who are all attached to and part of that club.
Most of the NRL clubs do this or something similar, some of them are more parasitic than others

Yeah it can be niche, the thing is not to worry about national reach and exposure rather to start it off locally at the grassroots and let it grow. There’s no need for some kind of major league rugby league just get some regional competition(s) going and they can be semi-pro but the main thing is they should be teams close enough to each other that travel isn’t expensive. There’s already some teams in NYC and Philadelphia for example and they aren’t far away from each other for the adult competition but they are far too far for juniors so you need 4-6 junior clubs around each of the senior clubs, ideally really close like mostly 15 minutes from each other so it’s not difficult for families to get the kids to their away games on weekends.
As for union poaching players it’s not something to worry about because league is a better game and eventually, if properly administrated, poaches union by the club and competition
