Kirk is always being handing clipboards by yeomans because he has to sign some paperwork. That sort of mundane work needed to run a ship in a disciplined organisation. These small details were added by TOS writers. Who were veterans on WW2 and Korea, and it was just second-nature to them. They just knew that's how things were done. And how those details that add verisimilitude are non-existent in NuTrek.
