im a KDE enjoyer but i gotta admit there's some annoying things about it
like you can't simply drag and drop app shortcuts into the "start" menu categories or rearrange them and have to use the janky "Edit applications" menu to do it manually
it's also weird how you have to setup each monitor's taskbar individually
even still though, it's made by a handful of open source contributors and yet it's leagues better than W11's and even W10's so i can't complain too much

It's possible, not likely but possible. Who is "they" and how is their bios "custom"? The guys who prebuilt the PC? I would be wary if so, you should really go directly to the manufacturer for updates.
If you use the manufacturer's own update file and aren't a complete and total retard, it's pretty unlikely that anything will go wrong. What makes it dangerous is that "unlikely" is not "impossible" and if something does go wrong it results in a brick. If you have stability issues and need to flash an update to try to resolve them, ideally this would be covered under warranty somehow, as in if you brick it you should be able to just RMA the board. Check their warranty terms and also some reviews online if you can find any to make sure they're not complete asshats because if they claim you bricked your own mobo there's not much you can do to prove that you did everything correctly and they're the ones who bricked it, so you kinda have to take them on their reputation.
