It's close to true, but it's more like: unless you are running open source software and you have full control over what software can run on the system and whether or not updates are installed and when they are installed, you don't own your computer - Microsoft or Apple or Google or Amazon own it (depending on whether you're using windows, or macos, or android, etc) - it ultimately answers to its true master.
And you'll eventually feel the pain from that, whether that comes in the form of your car suddenly being bricked by untested updates, or whether google has decided you're no longer allowed to run unsigned software on your phone, or if microsoft has decided that you're not allowed to use windows unless you create a microsoft account, etc.

I tried it about 3-4 years ago and got filtered by the lack of docs. The default guix install came with a login manager, I don't have any reason to use that so I tried to remove it as my first tweak of the OS, and failed miserably to create a working system without a login manager, then put off properly fixing it forever.
I'll reconsider it again when Gentoo finally goes to complete shit, probably.

the 4.4qt seems like the limit for one person if you want to do everything at the same time.

I didn't pack too much frozen food in there to make sure it would cook properly. about 2 hand fulls a 3 tendies.

20 mins total cook time,no pre-heat just put it in, one shake/flip half way.

for 2 people you'd have to either cook in batches or get a way bigger fryer.

I think if I had a mini rack thing that was tall I could put a nice bit more fries and maybe 2 more tendies and it would all cook

I think I've done that before in Windows, but I've yet to set it up on Linux.
My main PC is running Bazzite, and I also have an old laptop running Ubuntu Server where the mass cacaphony of Docker images are running. I could always just throw up another container on the laptop, but if I know anything about A1111, it's that it uses a lot of RAM and needs a GPU. Might it be worth considering running a docker container for A1111 on my main computer to handle A1111 tagging? Or will the 16GB and integrated graphics on my laptop suffice?

I won't be tagging often; I have just a few hundred pieces of art that I don't want to manually tag.
