I think it's more that there's much less need for high impedance headphones nowadays. In the past, more people were driving them with integrated amps which usually have very high output impedance on their headphone output (e.g. 470 Ohm on the Yamaha R-S202 mentioned in the OP), meaning output voltage drops precipitously with lower impedance headphones. Today, most people are using devices that can drive lower impedance headphones just fine. The MDR-MV1 is in fact about 15 dB/V more sensitive than the ATH-R70x and HD 600, making them higher impedance would sacrifice some of that for no good reason.
