This has less to do with creators not saying their stories are for adults but more to do with the fact that modern creators are clearly making children's shows but with adult content in them.
Kids love children's shows with adult content in them. It lets them pretend they're more mature than they are for enjoying something that is just bright colors and crazy shapes like any other kids show. This is the same reason South Park developed an audience.
