I've been using this site https://meatfighter.com/ascii-silhouettify/ to generate ASCII art for Fastfetch. It's pretty good, but it seems pretty geared towards flat logos and I want to display some stuff with more depth. I've used some other programs which can generate that depth, but they don't export to txt files with ANSI color codes, which would be the only way for fastfetch to read them.
