World War 2 in general was a Pyrrhic victory for Britain. The Great War crippled their Empire, and WW2 destroyed what was left.

Most of the kits now are as kitbash-averse as humanly possible, yes. The quality is also very inconsistent; the detail is better across the board, but in multiple cases it's WORSE than it was before.

That said, you can still kitbash a lot, but be prepared to sculpt/print a lot if you are into natural stuff/monsters.

PF2E has differences, although still obviously D&D esque.

PF1E is just a continuation and of 3.5 with a few things streamlined and improved. It came for 3.5 players so the 3.5 module company could keep making modules
